まず、一般的にうどん店は昼は強いのですが、夜は弱いのが現状です。夜もお客さまを呼ぼうとすると、お客さまが夜に長居できるメニューと雰囲気が重要になります。以前の居酒屋は大箱で、客同士が賑やかに並んで食事をするレイアウトが多かったのですが、最近の居酒屋は個室タイプが多くなっています。従って、難しいのは昼夜の共用で、昼はある程度解放感のあるレイアウト、夜は間仕切りができるレイアウトで、カーテンやロールブラインドなどで、不自然でない間仕切りを付けるのが良いと思います。
それ以上に重要なことはメニューで、夜は昼の2～5倍の客単価で、長居のできるメニューと雰囲気が重要です。
